Stocco with Potatoes

Ingredients: 1 kg of soaked stockfish 800 g of potatoes80 g of black olives100 g of extra virgin olive oil onionpeas or chili peppers Wash the potatoes, peel them and cut them into cubes or wedges. Heat the oil in a pan and add the sliced onions. Let them go on a very low heat for 5 minutes, without letting them color. Add the potatoes. Brown them 5 minutes over low heat, stirring frequently. Add a little salt, cover and cook over low heat for 15 minutes, stirring frequently. Cut the stockfish into small pieces. And add it to the potatoes with olives and, if necessary, a little salt. Put the lid on, leaving some space to let the steam out.
